We wanted to share a fun recipe that Erin came up with that is perfect for St. Patrick’s Day! We are so excited for the warmer weather to be coming our way here and can’t wait to do more adventures this summer and have a fun trip planned for later this year! We got to go on a fun outdoor adventure today at a local forest preserve with the puppies and of course had to stop for a pup cup on the way back! (Also Loki Elizabeth’s cats apologize for traumatizing you yet again) Here’s the recipe for Lucky Charms Marshmallow bars: Ingredients: 6 tablespoons of butter (plus extra if you want to use butter to grease the pan instead of PAM) 16 oz of marshmallows 1 11oz box of lucky charms Directions; 1. Grease a 9x13 inch baking dish 2. Melt the butter in a large pot on 3. Add the marshmallows and mix continuously until completed incorporated into the butter 4. Quickly add in the cereal and mix until just combined, don’t over mix or the lucky charm marshmallows will melt too 5. Transfer to baking dish. Use a sprayed parchment paper to press down into baking dish 6. Sprinkle with any leftover marshmallows, let cool 1-2 hours then cut 7. Store in air tight container for up to 3 days 8. Enjoy! Life got busy for both of us and it’s been harder to find time to do adventures together with both of us working full time, being with family, and taking care of our pets. (For a kid friendly version, omit the bailey's in the frosting and replace with milk and omit the Bailey's in the ganache and check out the link for a different ganache, link at bottom of the post) Do you ever have a recipe that calls for 1/2 cup of heavy cream (regular or whipping) but of course the grocery store doesn't sell just 1/2 cup containers of heavy cream so you have leftover that you have no idea what to do with? We run into that ALL the time! So we searched through the internet to find you some of the best ideas out there for using up that leftover heavy cream you have laying around. HOMEMADE CHOCOLATE GANACHE: perfect for going over cakes, brownies, cookies, ice cream, etc.! This recipe is great to use up any amount of leftover cream and allows you to use your preferred type of chocolate! Ingredients: Leftover heavy cream Dark, milk, or white chocolate (can be cooking bar, chips, chunks, etc. don't use a candy bar, those won't melt correctly) Different Ratios (chocolate : cream): Dark chocolate: 1:1 ratio Milk chocolate: 3:1 ratio White chocolate: 4:1 ratio Directions: 1. if using cooking bar, chop into small pieces 2. heat up heavy cream (stove or microwave) until hot and steamy, do NOT let it boil 3. Pour hot cream over chocolate pieces 4. Let sit UNCOVERED for 10 minutes 5. Stir until glossy Ways to serve the ganache: If you want to have it warm and runny to eat right away, pour it immediately over the dessert If you want to use it to cover the top of a dessert, let cool 4-5 minutes before pouring If you want to use it as a frosting, let cool to room temperature Looking for some fun treats to make this Mother's Day (or just for a way to make the day more delicious)? We LOVE pizza rolls! But sometimes they can be a little expensive in the store or you just don't have room in the freezer to store them.
